In The Kitchen with Anne

Hello friends,

Hope you are all well and staying safe. Troy & I have been busy working extra hours these days so I have not been able to blog recently. But this weekend I found some time to spend in the kitchen and wanted to share what I've been up to.

A couple of nights ago, I made a quick and delicious supper with the help from Trader Joe's. I already had the ingredients on hand so that made for an easy meal, with the addition of a salad.  I prepared TJ's Lobster Ravioli along with their jarred Tomato Basil pasta sauce. I also had a mini loaf of their Ciabatta bread and it was perfect for just the two of us.

I sauteed some onion and garlic in olive oil; then, added the whole jar of red sauce.  Once the onions and garlic were cooked in the sauce, I added the ravioli to the pan and let it simmer for 10 minutes.

While the ravioli was cooking, I made a Caprese salad with cherry tomatoes, fresh mozzarella cheese, fresh basil, olive oil, salt and pepper. (I also added some balsamic glaze once it was on my plate.)
It was an easy meal to make but tasted like I had spent all day cooking.

Another tip you might like to try is an easy way to add flavor to your water. Last summer, my daughter Kelsey & I went to the beach. Our hotel had a large dispenser filled with citrus infused ice water in the lobby near the pool area. We both had our insulated beverage cups with us and enjoyed the flavored water to keep hydrated and refreshed while in the sun. I re-created the concept at home without needing to pull out a beverage dispenser by juicing and freezing the citrus juice in ice trays. I really think I drink more water this way. Plus, we are adding a little vitamin C to our bodies doubling the benefit.

In other news, it is looking like our state might start Phase 1 out of the stay at home order on May 1st. I hope we can all stay safe while transitioning out of the quarantine. Take care and let me know if you try my tips and if you have any to share.

  1. Well, that looks delicious! Can you believe our isolation has now been extended until May 15th. I'm so tired of this and my hair is really tired of it. o)) Happy week!

    1. It's feeling longer every day (sigh). Hopefully we will begin phase 1 on the 15th of May! Take Care.

  2. Love those cute vitamin-c filled ice cubes. Great idea. PC will drink more water if it is infused. Especially if it is infused with Pepsi!
Oh, I wish we had a Trader Joe's. Lobster ravioli sounds divine and looks yummy, too. So does you Caprese salad. Stay well, you guys!!

  3. Looks good! Thanks so much for linking up with me at my #UnlimitedMonthlyLinkParty 12, open May 1 to 26. All entries shared if social media buttons are installed.

  4. Good idea to freeze the citrus water👍

  5. There's a major distinction. The facts demonstrate that completing a fix can be expensive and can dishwasher repair toss your month to month spending plan into heart failure.

  7. It has fully emerged to crown Singapore's southern shores and undoubtedly placed her on the global map of residential landmarks. I still scored the more points than I ever have in a season for GS. I think you would be hard pressed to find somebody with the same consistency I have had over the years so I am happy with that.
